The Cocoa Tree: Its Latin name is Theobroma Cacao which means “the food of the gods”. It is native to the rainforests of South America and is now grown in the equatorial countries around the world.
The Cocoa Pods: They come in a variety of colors such as greens and yellows reds and even purple. They can be as long as 12 inches and contain as many as 40 seeds which become the basis for any truly chocolate product.
The Nibs: The seeds are taken from the pod and either sun dried or fire dried. These are what you nibble on when you purchase nibs.
The Processing: This is where Xocai parts ways with previous chocolate makers. We cold press the chocolate to retain as much of the antioxidants as possible. We do not add milk and sugar. We do not make candy! Xocai chocolates are a whole food and because it is a whole food there are amazing health benefits in the areas of heart health and weight loss and longevity.
The Person: That would be me! I grab my pretty little square of “Xocolat” and rest in the fact that I am not doing damage to my diet – my blood sugar levels – my waistline. I am in fact cleaning up years of mess and loving every bite of it!
